Delicious Spring Zoodle Salad

Spring is the ultimate time for light, refreshing meals that won’t overburden your digestive system while allowing you to shed winter stores in time for an active summer.

This delicious zoodle salad is light yet satisfying and nourishing. It’s really easy to make and fun for the whole family to get involved with.

This recipe is designed per person, so simply multiply it to suit your setting.


  • 1 zucchini

  • ¼ fennel bulb


  • ½ lemon

  • 1 tbsp pepitas

  • 1 tbsp olive oil

  • ½ small green chilli

  • 1 tbsp nutritional yeast

  • Salt & pepper to taste



  • Spiralise the zucchinis

  • Grate the fennel


  • Add all ingredients into a blender and blitz for 30 seconds

  • Combine, toss and serve with a sprinkle of pepitas on top

  • Eat with loving intention
