Ingredients:
1 zucchini
¼ fennel bulb
Pesto
½ lemon
1 tbsp pepitas
1 tbsp olive oil
½ small green chilli
1 tbsp nutritional yeast
Salt & pepper to taste
Instructions:
Noodles
Spiralise the zucchinis
Grate the fennel
Pesto
Add all ingredients into a blender and blitz for 30 seconds
Combine, toss and serve with a sprinkle of pepitas on top
